I’m back on a Pinterest kick, although this go around, I’m pleased to say I’m actually making/doing some of my pinned items. Today’s Pinterest project, low calorie peanut butter cookies.
- 1 cup peanut butter
- 1 cup sugar
- 1 teaspoon baking soda
- 1 egg
Mix. Bake at 350 for ten minutes. That’s it.
They taste really good. In fact, I think they taste a hellava lot like regular pb cookies.
So, I’m not entirely how these got circulated around as being only 35 calories a cookie, but that is a lie. Maybe if you use reduced fat peanut butter, egg whites and a sugar replacement, but if you make the recipe as instructed, you’re looking at probably closer to 100 calories a cookie. 1 cup of peanut butter packs some mega calories (like 1600).
While not a mere 35 calories per cookie, this recipe is a skinnier version of a regular peanut butter cookie, which also has butter and flour.
A Pinterest success. Yummy and kind of skinny and something I’ll make again.
