Now for the recipe.  Originally a Pinterest find but with an Ani twist.

Parmesan Roasted Green Beans

  • Fresh green beans
  • Olive oil
  • Parmesan
  • Salt and pepper to taste
  • Toasted sesame seed oil

Heat your oven to 400.  Toss your fresh green beans with olive oil (enough to lightly coat the beans).  Lay green beans on a cookie sheet and sprinkle with Parmesan cheese.  Salt and pepper.  Bake for 20 minutes.  The beans will be a little al dente, meaning they’ve still got a little crisp to them.  Splash with sesame seed oil and enjoy.

Note:

  • No, you cannot use the sesame seed oil from the beginning.  It has a low burning point (if that’s the correct terminology) and will fill your oven with smoke.
  • Because the sesame seed oil has a strong flavor, you don’t need much oil.  Or much parmesan for that matter.
  • This was not the most appealing recipe to my little ones, but the adults of the family loved it.  I’ll make it again.
